Pastalitos
Jo's nan used to make these for her - it's a Mexican recipe and another name for them is Mexican wedding cookies. Some recipes have finely ground nuts added to them but we prefer ours without.
8 oz butter
2 oz caster sugar
8 oz plain flour
4 oz cornflour
1tsp good vanilla extract
1 oz icing sugar
1tsp cinnamon
Heat the oven to 170c. Cream the butter, sugar and vanilla together until soft. Add the sifted flour and cornflour and mix together until you have a dough. Knead for a minute to bring everything together. Pinch off pieces the size of walnuts and roll into balls. Bakes for 30 - 40 minutes until pale golden. Whilst cooling mix together the icing sugar and cinnamon. Roll the cookies in the icing sugar mix until well coated.
